I usually write in free form.
just_dawson, the format you mention is an available option, but it tends to be wordy in English. Most anglophone haijin work within a limit of 17 syllables or fewer, divided into three lines of varying lengths.

Ana . . . I like your poem very much. As an eye doctor, you would be very much aware of cat eyes. As a cat lover and owner, I am enchanted with their eyes and how they change.
