I have never tasted water directly from a well as I've been too worried in case anything has fallen in there and died, so the 'deepening' taste made me shudder slightly, Joy! But that's just my reading and I'm sure others find something different in there…the haiku, that is – rather than the well! :)

I like it as it is, but I also long for a more concrete word than “deepening” -; say ‘earthy’ or even ‘bitter’.
